Classes are led by chef patron JP McMahon. JP has many years teaching experience and regularly ran cooking classes in Cava Spanish Restaurant & Tapas Bar and children's workshops that promote food provenance and better eating.

The classes are a great way to learn how to cook and engage with current trends. Classes include demonstration and hands-on activities for students to gain confidence in the kitchen.

UNDERSTANDING FOOD - 6 Week Course: €495

This course will look at 6 basic food elements. Each week we will look at the origin and traceability of food and how best to prepare it. The course will also look at the seasonality of food, wild foods, and foraging in one’s own local environment. The course includes a tasting of the day's produce with a glass of wine at the end of the day. Students are asked to bring along a container/lunch box to bring home samples of the day's produce. Students will receive a certificate on completion of the course. Please note: courses will run on Bank Holidays.

DEPOSIT: A deposit of €150 is required when booking, (alternatively you may post your voucher, if applicable). Day Workshop - Tapas at Home

One Day Workshop: 10am – 5pm : €225 

Tapas are a Spanish way of cooking and eating that involves sharing and communal eating. In this course, students will be introduced to a range of different tapas, drawing on different regions of Spain for influence and diversity. They will also explore using Irish ingredients to create wonderful tapas. The course runs from 10am to 5pm and includes a light lunch and a tasting of the day's produce with a glass of wine at the end of the day. Students are asked to bring along a container/lunch box to bring home samples of the day's produce. Students will receive a certificate on completion of the course.

Day Workshop - Planning a Dinner Party

One Day Workshop: 10am – 5pm: €225

Learn how to plan a dinner party at home. The course will teach you how to plan, prepare and cook a four-course meal. This will include food and wine pairing. Students will learn how to make bread, prepare a starter, a fish course, meat main course and a dessert. Emphasis will be placed on food provenance and sourcing from local suppliers. Students will also learn new cooking and culinary techniques. The course runs from 10am to 5pm and includes a light lunch and a tasting of the day's produce with a glass of wine at the end of the day. Students are asked to bring along a container/lunch box to bring home samples of the day's produce. Students will receive a certificate on completion of the course.

Day Workshop - How to be a Better Cook

One Day Workshop: 10am – 5pm: €225 

This course will cover all basic cooking techniques, such as frying, roasting, braising, boiling, and smoking. It will show you how to source better meat and fish and vegetables and cook them in different ways. It will also teach you how to cure your own meat and fish, pickle your own vegetables and preserve herbs with salt and oil. In addition, students will make butter and cheese by hand. This course is suited to all with a love of food and would like to better themselves in their daily kitchen. The course runs from 10am to 5pm and includes a light lunch and a tasting of the day's produce with a glass of wine at the end of the day. Students are asked to bring along a container/lunch box to bring home samples of the day's produce. Students will receive a certificate on completion of the course.

Day Workshop - Contemporary Irish Cooking, Wild Food & Seaweed

One Day Workshop: 10am – 5pm: €225

This course will look at contemporary Irish cooking with a focus on local and artisan produce. While covering the basic elements of cooking, this course will show students how to source better meat, fish and vegetables and cook them in different ways. It will also teach you how to cure your own meat and fish, pickle your own vegetables and preserve herbs with salt and oil. In addition, students will make butter and cheese by hand. This course is suited to all with a love of food and would like to know more about Irish food now. Day Workshop - How to be a Better Baker

One Day Workshop: 10am – 5pm €225

This one day course will introduce students to different types of baking from bread to cakes to desserts and puddings. From brown bread and scones to sponge cakes and simple desserts such as pannacotta and frozen Ice-creams, this course offers an introduction to the world of baking with tips and techniques. The course runs from 10am to 5pm and includes a light lunch with a tasting of the day's produce and a glass of wine at the end of the day. Students are asked to bring along a container/lunch box to bring home samples of the day's produce.

Day Workshop - Gastropub Classics

One Day Workshop: 10am – 5pm  €225

Pub food is often over-looked and rarely gets the attention it deserves. In this course, we will look at some of the classics that make up what we now call 'Gastropub' food. These include Steak, Fish and Chips, Ham hock Terrines, Potted Crab, and of course, the hand made burger. As always, emphasis will be placed on food provenance and sourcing from local suppliers. Students will also learn new cooking and culinary techniques. The course runs from 10am to 5pm and includes a light lunch and a tasting of the day's produce with a glass of wine at the end of the day. Day Workshop - Italian Cooking at Home

Italy cooking creates some of the most popular dishes we know: from focaccia and lasagne to risotto and pasta. This course introduces the student to a number of key Italian dishes. The student will learn to make fresh egg pasta, gnocchi, and tortellini. We will also focus on regional Italian dishes using Irish fish, meat, and vegetables. The course runs from 10am to 5pm and includes a light lunch and a tasting of the day's produce with a glass of wine at the end of the day. Day Workshop - The Perfect Fish and more...

  • Sunday 8th March 2020

This one day course shows budding cooks how fillet and cook fish to perfection. From cod to hake, and monkfish to squid, this course will help you identify different species of fish, learn about the seasonality of seafood, the ethos of using local and sustainable fishmongers, and how to combine fish with other different foods and wines. Day Workshop - The Perfect Loaf

  • Sunday 9th February 2020

One Day Workshop: 10am – 5pm: €225

This one day course teaches students how to make bread in all its shapes and varieties. From a simple white loaf to sweet brioche or bagel, from sourdough to rye and wholemeal, this course will show you how to become a better baker. In this course students will also learn how to make butter, cheese, crackers and terrine. The course runs from 10am to 5pm and includes a light lunch (while the bread is rising!) with a tasting of the day's produce and a glass of wine at the end of the day. Students are asked to bring along a container/lunch box to bring home samples of the day's produce. Students will receive a certificate on completion of the course.

This day course will cover all aspects of Irish Christmas cooking, from the traditional to the innovative. Students will learn how to cook the perfect local turkey with all the trimmings. This course aims to take the stress out of Christmas cooking and make it an enjoyable experience. Students will receive a certificate on completion of the course.
